Meet Justin

A New Orleans po'boy legend just joined the family.

You probably already know his kitchen. For more than two decades, Justin has been the General Manager and Head Chef of Parkway Bakery & Tavern — the century-old Bayou St. John institution that helped write the book on the New Orleans po'boy.

He moved from Biloxi to New Orleans at eighteen to join his uncle, Jay Nix, who reopened the historic corner spot in 2003. When Katrina tried to wash it all away in 2005, Justin helped rebuild it board by board — and never left. Today he runs one of the busiest kitchens in the city, slow-cooking over 1,000 pounds of beef a week for the from-scratch "debris" gravy people cross state lines for.

That heart, that hustle, that hospitality — it's exactly what House of Hogs is made of. We couldn't be prouder to call him one of us.

What it means to be a Hog

The family Justin just joined

We're a 501(c)(3) nonprofit that turns barbecue into hope — one plate, one event, one family at a time. Here's the crew Justin's now a part of.

  • A mission that matters. Every dollar we raise goes to families battling pediatric brain cancer — the reason we show up, every single time.
  • An award-winning booth. From Hogs for the Cause to Boil for a Cause and beyond, our crew builds the events people talk about all year.
  • A whole lot of heart. We cook big, laugh loud, and treat every guest like family. Now Justin's one of us — and we couldn't be happier to have him.
